Cranberry Date Sauce
Prep Time: 5 minutes
Cook Time: 15-20 minutes
Cool Time: 1 hour
Total Time: 1 hour 30 minutes
Instead of using canned cranberry sauce, which personally I think is an abomination but I know it’s nostalgic to many Americans so I’ll let it slide… but not in my house 😤 This cranberry sauce is so simple, it requires one pan and the oven does most of the work, so there’s really no excuse. I had it with brisket and roast chicken and it was 10/10. I got the inspo from @feelgoodfoodie!
Ingredients:
340g (12 oz) fresh cranberries
2 tbsp date spread / jam / paste (very easy to make - ref. recipe 1!)
120ml (1/2 cup) date syrup
60ml (1/4 cup) maple syrup
50g (1/4 cup) granulated sugar
Zest of 1 orange
Juice of 1 lemon
2 tsp cinnamon powder
Pinch of salt
120ml (1/2 cup) water
Instructions:
Prep:
Rinse cranberries
Zest orange
Juice lemon
Cooking:
Preheat oven on to 350 F
Place all the ingredients in an oven proof pan (I used this one from Great Jones). Mix and then place in the oven.
After 30 minutes, remove and mix. Place back in the oven for another 30 minutes.
Remove from the oven. If it’s too thick, add more water or juice and mix to your desired consistency. The sauce should coat the back of the spoon and it will thicken as it cools.
Texture Guide:
For smooth: Blend after cooling
For chunky: Leave as is
For in-between: Partially mash while cooking
Storage:
Fridge: Up to 2 weeks
Freezer: Up to 3 months
Room temp: 2 hours max
